Icebergs Dining Room and Bar is made up of a team of passionate, gifted and hard working hospitality professionals. Over the years the Dining Room has seen members of our team rise to great heights and go on to do exceptional things. We are honoured to have worked with such talented individuals- and to continue working with our current extraordinary team every day.

MAURICE TERZINI

Maurice Terzini is best known for stamping his indelible mark and style on both the Sydney and Melbourne dining experience. His long history in the hospitality industry and gift for fostering lasting creative relationships have seen him establish not only some of Australia’s most iconic dining venues, but also a number of Sydney’s most recognizable events. Born to Italian parents in Melbourne, early years spent back in Italy cemented in him a love of his culture and heritage, awakening a life-long passion for Italian hospitality.

At the age of 23 Terzini opened his first venture, Caffe e Cucina on Melbourne’s then undiscovered Chapel Street, with the café radically altering perceptions and conventions around the dining scene at the time, offering high-end quality in a café setting. A string of successful hospitality ventures followed, capped by the jewel in the crown of Icebergs Dining Room and Bar on the cliffs of Bondi- opening in 2002. More than a decade on, Icebergs is still at the forefront of the Australian culinary landscape, thanks to Terzini’s gift for dreaming the big picture and executing it, often ahead of his time and breaking ground in ideas, style and locations.

With an ever evolving menu focused on modern Italian cuisine and celebrating seasonal flavours, the intimate and elegant Dining Room is the beating heart of Icebergs Dining Room and Bar. Arranged to take in the famous view of Bondi, by day or night, it makes an unforgettable backdrop to a menu inspired by Maurice Terzini’s Italian heritage.

Over the years the Dining Room has been at the forefront of evolving the perception of Italian food and shaking up the way Australians eat Italian.

The menu is designed to give you a seasonally changing opportunity to sample dishes that reflect the depth of Italian cuisine, created with the best produce that Australia has to offer, including sustainable seafood, artisanal produce and the occasional hint of native Australia.
